Fast Chicken & Butter Bean Stew

Ingredients

  • 300 grams of chicken fillet
  • 2 cloves of garlic
  • 250 grams of lima beans
  • 1 tablespoon of olive oil
  • 1 bit of pepper
  • 1 piece of leek
  • 200 grams of spinach
  • 10 sprigs of thyme
  • 1 glass of white wine
  • 1 bit of salt

15 minutes

Instructions

  1. Finely chop the clove of garlic.
  2. Cut the chicken fillet into coarse pieces.
  3. Put a tablespoon of olive oil in a wok.
  4. Put the chicken with the garlic in the wok and season it with some pepper and salt.
  5. Wok the chicken until it turns nicely brown.
  6. Meanwhile, clean the leek.
  7. Cut the leek into elongated strips of about 10 cm. You can also simply cut it into rings, but I like the variation in structure.
  8. Add the leek to the chicken and wok this briefly.
  9. Rinse and add the lima beans.
  10. Extinguish the whole with the white wine.
  11. Add the spinach and gently stir in the dish so that the spinach shrinks.
  12. Let it all simmer.
  13. Remove the leaves of thyme from the sprigs and add the leaves to the dish.
  14. Ready is the fast chicken & butter bean stew. Enjoy your meal!


About the quick chicken & butter bean stew recipe

This fast chicken & butter bean stew is really brilliant, even if I say so myself. It is because of the simple combination of those few ingredients in this dish. If you prefer not to boil with alcohol, you can also replace the wine with chicken broth with a small dash of white wine vinegar. Also very tasty!

If you choose the white wine, it is good to keep in mind that not all alcohol evaporates. After more than 2 hours of stewing of dishes to which alcohol has been added, more than 90% of the alcohol has disappeared. With shorter heating, more alcohol remains: about 40% after 15 minutes of heating. So there is a little bit of alcohol left.

How can this dish be healthy ?! That is pretty simple. The Health Council advises not to drink alcohol or at least not more than one glass per day. Only 1 glass of white wine goes into this dish. That is half a glass per person. In addition, a portion of the alcohol evaporates. So it's really just a little bit of alcohol and that's why this dish still fits perfectly in a healthy diet.
Protein curd cake with nuts, apple and cinnamon with Marit

The combination of apple and cinnamon remains a winning combination. This can be in a  low carb apple crumble, a bowl of  apple pie oatmeal  or, like today, in this delicious cheesecake from Fit with Marit. Believe me!  it's hard to resist a second point of this cheesecake. Admittedly, there is a decent mountain cream cheese processed, but this cheesecake is the worst yet. It's ie full of good fats by the notes hidden in the soil!


Preparation:

-Preheat the oven at 160 degrees in advance.

-Put the nut mix in a food processor and make sure you do not grind too fine notes.

-Add below the raisins and coconut oil to the mixture in the blender and turn the blender again. Grind a bit until you get an even grind mix.

-Lined a mold of about 24 centimeters in diameter with baking parchment and spread the mixture on bottom of the cake pan.

-Create a separate bowl the filling: Mix the cottage cheese, cream cheese, eggs and egg whites, cinnamon and possibly some protein powder mix well with a fork or whisk.

-Pour  the filling over the bottom and turn the oven bake for 30 minutes.

-Cut an apple in some pieces to decorate the cake after cooling.

-Sprinkle some extra cinnamon on the cake to show that it is incorporated in the cheesecake.

Broccoli stilton soup

My name is Claartje, and I'm a cheesehead. Whatever you carry me; if there is cheese in, on or near is I like it. The broccoli soup is basically healthy (broth, vegetables, nothing else), but to make it more exciting I add very much like a large piece of blue cheese - such as Stilton. This crumbly blue cheese has a spicy, intense flavor that I find very good combination with broccoli.

Be the best broccoli al dente in the stock, which grind in the blender and make the soup in a blender, then mix in the cheese. Keep a few grains cheese separately to garnish. This recipe makes 4-6 servings of soup.

Preparation

Boil the broccoli cooked in the broth gallon.

Put  the broccoli and broth in a blender or mix with a hand blender.

Add the crumbled cheese into pieces. Keep a small amount of cheese to garnish separately.

Serve immediately.
Green smoothie with orange and cranberry juice

Even after all those bulging new year dinners? Create a crackling healthy smoothie! This vitaminebom I made for myself and a friend who suffer from bladder infection so I used cranberry juice, because it seems to help against cystitis / chronic plasseritis. I just used cranberry juice from the supermarket, so full of sugar. Yeah sorry, I did not feel in order to cycle to the Nature Shop / Marqt / vega shop. But that does not detract from the fact that this smoothie is good for the resistance, because you get a lot of fruits and vegetables in one go!

This recipe makes three portions. Tip: freeze the portions that do not directly drink it immediately, so that all the nutrients are preserved. Under the influence of light and oxygen going vitamins break down, so make sure you store your smoothie light- and airtight!

Preparation;

Mix all ingredients in a blender.

Garnish with cocoa nibs and possibly some sunflower seeds and pumpkin seeds. Bon appetit!

Personally, I like to eat it with a handful of roasted almonds (but well, I am now also a practical toasted almonds) and a cheese sandwich.

Vegetarian curry with root from the Good Food Book

Vega dinner

You have good (cook) books, you better book, and you have the cookbook. In the latter category covers the Good Food Book; good in all senses of the word. INGREDIENTS
Carrot 400 grams
2 centimeters ginger, finely chopped
1 lemongrass stalk, finely chopped
1 red pepper pieces
Lime 1 piece
Lime juice 1-2 tablespoons (or more to taste)
Coconut milk 1 liter
Coriander to taste
Cane sugar 1 tablespoon
Cut the roots (in first peel!) Into cubes of about 2 by 2 centimeters. Fry them gently in a pan in a little oil, about 5 minutes.

Add the ginger, cumin and lemon to the pan. Cut the pepper in half lengthwise and remove the seeds list out. Cut the pepper into small rings and also add to the pan.

Peel the lemon, cut the slices into pieces and also add to the pan.

Then add the cane sugar, a pinch of salt and the lime juice.

Pour the coconut milk last until the roots are below. Preheat be done to the roots and the curry is hot.

Serve with brown rice and some freshly chopped cilantro. Bon appetit!

Tip: If you curry let stand overnight, the next day even better. Really; the flavors of the individual ingredients attract still more in the coconut milk and make the dish even more intense flavor.

So I get new products often taste first - sometimes even before the products in the store are available. Because Optimel main sponsor was the We Love Smoothies workshop all the participants of the workshop were the new season flavored yoghurt Greek style, taste berries, too trials for he well and truly hit the shelves. I like this. And since I happen to be fond of healthy breakfasts, I made a super simple tiramisu that you can eat very well as breakfast. Because the tiramisu is I added a few long fingers, for the idea. Which you can of course leave out. This recipe makes two servings.

INGREDIENTS:
Optimel Greek Style Variation Forest Fruits 300g
Muesli 6 tablespoons
Blueberries 4 tablespoons
2 tablespoons coconut shavings
1 banana pieces
Two espresso cups
Ladyfingers 4 pieces

Let the ladyfingers briefly soak in a little coffee. I poured the coffee into a bowl, the ladyfingers broke into pieces and put the pieces in the coffee. Start with a layer of yoghurt Greek style in both the bowls or pots where you make it to breakfast. Make sure you are left with half the yogurt. If you do not use Optimel does a different kind of Greek yogurt also fine, but if you are just such a sweet tooth like me it is nice to add still jam or honey.

Then comes a layer of banana. Arrange the banana slices over the two bowls or jars. Divide the granola over the following two bowls. Heen about the pieces go into coffee-soaked long finger. Push a little bit, because now there's another layer of yoghurt Greek style. Garnish the 'tiramisu' with the blueberries, blueberries and possibly an extra long finger. Enjoy!
